Circular Sourdough Bread
Each loaf baked in our bakery contains a small portion of old bread. This not only allows us to reuse old bread, it also improves the taste and prolongs the shelf life of new loaves.
Pulp Fiction Challenge
We already reuse all of our leftover bread. Now, we’re tackling a new challenge: using leftover fruit pulp fibers to create more healthy and tasty recipes.
Living lab
Our circular experiments and creations are tested in the Baking Lab cafe and sold in the storefront, playfully engaging the general public with our mission.

Vision, Model, and Mission

Reconnecting people with the artisanal food space is important. It promotes craftsmanship and fosters deeper engagement with food, the environment, and our slower senses such as smell, taste, and touch. At our school, we explore how this rich sensory context can stimulate creative thinking and help prevent food waste. We also believe that thinking differently and more creatively will help us design new, inspirational, and effective interventions to address the broader social and environmental challenges our society faces.
