Circular Sourdough Bread
Each loaf baked in our bakery contains a small portion of old bread. This not only allows us to reuse old bread, it also improves the taste and prolongs the shelf life of new loaves.
Pulp Fiction Challenge
We already reuse all of our leftover bread. Now, we’re tackling a new challenge: using leftover fibers from fruit pulp to create new applications.
Living lab
We develop workshops and training programs rooted in creative thinking. The challenge is to reduce food waste, create healthier products, and improve flavour. We also show that this method of innovation can be applied in other domains. We test our innovations in the Baking Lab café, an informal place to engage the public in our mission.

Change Perception, Care and Make a Difference

At the heart of our training program is a simple question: How can we bring more balance to the way we use our senses, make common sense common again, and use our vast knowledge and capabilities not to harm the environment and our communities, but to respect and strengthen them?

Too often, we rely on sight and hearing, while ignoring our more earthy senses, smell, touch, and tast. By reintegrating these often overlooked senses into the design of creative, circular processes, we explore different ways to uncover “hidden” and frequently wasted opportunities to connect the dots.

During our workshops and trainings, we utilise the artisan space to experiment with unconventional ways of reconnecting with these opportunities in surprising and innovative ways. This approach is not only inspirational but also provides guidance for navigating the complex challenges of our time.

Sustainable change doesn’t necessarily have to rely on major technological transformations. It can also start with a small, noticeable shift at the individual level and grow into a genuine, lasting, and expanding impact.
