Craftsmanship, Food Waste Prevention, and Innovation (May 2026)
The GGD is the Dutch public health organisation that prevents disease and protects community health.
Our school is developing a “healthy” fruit fiber cookie made from leftover fruit fibres and bread. It will be distributed to 2,000 employees during the yearly appreciation day for healthcare workers, to recognise and celebrate their work.
Challenge: Develop a low-sugar, circular, healthy cookie that demonstrates how food waste can be reduced, while maintaining a convincing and enjoyable taste.
Main ingredients: old bread, leftover fruit fibers.
