Reduce waste and transform fruit pulp fibers into more healthy recipes?
Fruit pulp is made up of the fibrous remains of various fruits/veggies – like apples, carrots, oranges, and ginger – that go into the freshly made juices served in our cafe. Although its often seen as a waste product, this pulp is full of fibers with several health benefits including stabilizing blood sugar levels and providing a feeling of satiety. Fibers also form the building blocks for beneficial gut bacteria.
Over the course of several months we have been experimenting with different methods for preserving and utilizing fruit pulp. For example, by caramelizing the fruit pulp in our ovens and fermenting it.
